Olivea's Ultra High Phenolic is the oil to take by the spoon: one to two tablespoons a day, straight or drizzled over finished food. Each tablespoon carries about 14 mg of hydroxytyrosol compounds, nearly three times the 5 mg a day behind Europe's authorized olive polyphenol health claim. • Olives: 100% Olympia variety from small family farms around Kalamata in Messinia, hand picked early in the season and cold pressed within hours by mechanical means only, then rested under nitrogen in cool stainless tanks until bottling. Acidity under 0.4%.
• Certified: USDA Organic through Control Union Certifications, EU organic leaf. Screened for more than 200 pesticides, none above 0.01 mg/kg.
